Indian cuisine is so versatile and there is such a huge variety it seems like there is always something new to learn about it. :)<br /><br />I especially like the addition of amchoor in your curry and the apricots. You can adapt it and make it as simple as just using more curry powder, but you will not get the same level/layers of flavor.
